It is one of those days that is colder than I expected. It is a bit cloudy. I have so much to study and little desire to get out of bed. I would love some soup write now… so I will share a recipe. This is my favorite mushroom soup recipe (thanks Mom!)
Chop 1 lb. mushrooms.
Add 3 cups chicken broth (4 cubes).
Add 1 onion whole.
Simmer 15-20 minutes.
Melt and heat 3 tbs. butter, add ¼ cup flour.
Add 1 cup milk.
Stir until thickened.
Whisk into mushroom mix.
Add ¾ – 1 cup heavy cream. Salt, pepper, paprika or 1 tbs. parsley
1 tsp sherry
Heat gently. Do not boil.
